Tonight on FOX their Gordon Ramsay culinary competition series Hell’s Kitchen airs with an all-new Friday, October 05, 2018, season 18 episode 2 and we have your Hell’s Kitchen recap below. On tonight’s Hell’s Kitchen season 18 episode 2 episode called, “A Fond Farewell,” as per the FOX synopsis, “Chef Ramsay announces that he is taking his risotto off of the Hell’s Kitchen menu, and the contestants are tasked with preparing their own risotto dish in the hopes of replacing the old one for the remainder of the season.
Then, in preparation for the first dinner service of the competition, Chef Christina calls both teams down to the kitchen to demonstrate how to make the night’s menu. While the veterans are prompt and attentive, the rookies drag their feet.”

Hell’s Kitchen: Rookies Vs. Veterans begin tonight with Chef Gordon Ramsay standing as the bagpipes play “Amazing Grace”. He announces today is about a passing of a near and dear. They are saying farewell to Jocky. Sous Chef James ‘Jocky’ Petrie emerges from a side door wearing a kilt (which Chef Ramsay jokes about looking under) and reveals they are retiring the Hell’s Kitchen favorite dish lobster risotto.
He is now giving them each a chance to put their risotto on the Hell’s Kitchen menu, but he is also giving the winner of this challenge something that will make this journey a little easier; Maitre D Marino comes out with a punishment pass, not only will it save you from the punishment but also allow you to join the winning team on their reward. Whoever gets it, can only use it once, so they need to choose wisely!
Chef Ramsay informs them he will not be tasting all 16 of their risottos. Sous Chefs Christina Wilson and Jocky will taste them and narrow it down to 4 red and 4 blue, while he is up in his office organizing tonight’s menu.
Chef Ramsay returns and Christina announces the first person up is Chris, who did a pan-seared pork belly with a poached egg. He says it doesn’t look like risotto but the flavors are fantastic and its a great start. Jocky’s first pick is from T. She made a scallop risotto, with green tomato relish. He wasn’t sure about relish on risotto but it is delicious. He says it is definitely better than Chris’.
Christina’s chooses Gizzy’s dish next who made an all vegetarian dish. He wonders that there is no protein to back it up. T thinks she is stupid to think her dish would make it in Hell’s Kitchen. He actually says it lifts the palette up and has an edge over T’s. Gizzy feels validated. Jocky picks Roe next and she created a carrot risotto and the rice is a touch too crunchy; so Gizzy remains in top place.
Christina’s 3rd choice is Mia, who made sweet pea, basil, and pancetta risotto. He says that is really good and even goes back for seconds. He says its definitely beats Gizzy’s. Jocky picks Ariel who created a peperino and wild mushroom risotto. Ramsay tells Ariel that her dish was good but Mia’s dish was better.
Christina’s final choice is Scott’s. He created a blister tomato, mascarpone and bacon risotto with scallop on the side. Chef Ramsay has him taste Mia’s asking if his tastes better than Mia’s, he feels it does but Ramsay disagrees. Jocky says Bret is his final choice and he made grilled shrimp and charred asparagus risotto. He tells Bret to get back in line as he confirms these two are definitely the best two dishes of tonight. Chef Ramsay says the best dish belongs to Bret and he is the recipient of the Punishment pass.
Back in the dorms, Bret is being overly emotional acting so tough and bragging too much, getting on everyone’s nerves. Christina calls up to the dorms telling them to come to the red kitchen. The entire Blue team comes down as the red team takes their time; Christina shouts, “Don’t f**k with me!” and why aren’t they traveling together; wondering if they are on vacation. Jocky doesn’t think it’s funny at all.
Christina and Jocky are showing both teams what their menu will be for tonight. Trev isn’t paying attention as he feels he is a trial by error kind of guy, feeling this is simple and this isn’t a hard menu, letting his food doing all the talking.
Christina gives her team a pep talk, saying the advantage they have is the blue team has an ego; they think they know everything, but it’s clear they lost for a reason. Jocky catches what Trev is doing, saying he knew he wasn’t paying attention and this is really bad!
Jocky tells Trev he needs to get his crap together or he won’t last long in this competition. Trev says he doesn’t need to get yelled at as he has 7 years of experience and knows what he is doing, but Jocky feels his work is really bad.
Chef Ramsay tells the blue team that he wants to hear them call out orders. He gives the advice to the red team that when they fire a ticket, they count down; they are excited but terrified at the same time. He wishes them good luck as he asks Marino to open Hell’s Kitchen!
Don McLean, singer of “American Pie”, actress Annie Wersching (Vampire Diaries) and actor, Kyle Schmid (A History of Violence and History’s SIX) are among the guests for tonight’s opening night. Tableside appetizer of shrimp and pesto is being served by Roe for the blue team (Veterans) and Scott for the red team (Rookies).
The first order up of risotto on the blue team is too cheesy and Ramsay tells Bret he needs to be on that as this is his dish; its supposed to tomato, not cheese. In the red kitchen, Scott is confused and already messing up with the shrimp for the risotto. He really wants Chef Ramsay to slow down and ends up cooking extra shrimp. Chef catches him cooking more shrimp and when he asks what he is doing, he says he is cooking them for tableside.
Ramsay asks if he really takes him by his hand to the table and says, “That is tableside!” Scott is completely embarrassed as Chef Ramsay leaves him there.
T brings up two beautiful risottos to the pass and the blue kitchen seems to be going smoothly, but Trev thinks Chef Ramsay is looking for a leader. He tells Jen the scallops are perfect because they are something he never screws up on; of course, Ramsay brings them back and he has to refire them.
The red kitchen jives and are the first to move on to entrees. Jose brings up the fish and its raw. Chef Ramsay is pissed off, telling them to get a grip as Jose can’t even cook Halibut and Scott can’t even cook shrimp nor knows what table side it. He tells them to grow some or he will put them on a cart and push them out the door himself. He reminds them they are professional chefs who are acting like idiots.
Jose is able to deliver the first entree now as Chef is waiting for the blue team to produce their first entree. Bret is yelled at by both Jocky and Ramsay for slicing the lamb, he promises not to do it again.
Back with the red team, Chef Ramsay wants to know what all the writing is about, saying this isn’t an English exam. He throws out all the papers Chris has been writing and snaps his pencil in half, saying they need to cook.
Jen is working the grill as Heather and Kevin worry that her pork is overcooked. She doesn’t think she needs their help but Trev ends up rescuing her when she needs pork sauce and she says she didn’t know she needed pork sauce. He continues to get beautifully cooked meat from the blue team.
Chris tries to call back the ticket that Ramsay just called out to the red team. He isn’t used to the ticket system and he literally forces them to sing it out repeatedly several times and then gives them 7 minutes to complete the ticket. Once again, he is given raw lamb; he informs them he has never had such a fragmented service in his life and the only thing missing from the meat is the wool. He is done and rather cook on his own with Christina. He tells them all to screw off to the dorm and which two individuals they could do without; kicking them out of the kitchen.
The blue team finishes strong as Roe feels it is finally sinking into the red team where they are. Up in the dorm the red team debates who should be going home. They feel it was fish and meat who screwed up the most and they need to roll the dice as one of them is going home.
Chef Ramsay says it was a nightmare. Kanae says the first nomination is Scott because he couldn’t handle it and that was one of their downfalls. The second nominee is Chris, he wasn’t doing enough at the meat station and once the meat started dragging it was hard for Jose.
Chef Ramsay calls out Chris and Scott as well as Jose. He says Jose dropped his head, sunk and disappeared. He wonders if this is Scott at his best and when Scott says he can cook beef extremely well, Chef says he should be a butcher. Chris says he got mixed up, trying to remember things as his mind got mixed up after an accident that destroyed 90% of his face last April, so his memory is a challenge but he has a fire in his belly and soul. He is sorry about the accident but he needs to fight back.
He tells Jose and Chris to get back in line. He says the good news is Scott’s restaurant is open tomorrow night and for him to get out of there. He couldn’t believe Scott was cooking the table side inside the kitchen.
“Scott remembers working with some of the biggest named chefs in the world, but whether they would remember him is another matter entirely. I know I won’t remember him by tomorrow!”
